Fluffy Bunny Pancakes

Start off your Easter long weekend with these Family-fun recipes! Paleo-styled recipes allow you to indulge in your favourite foods without any guilt, empty calories or loss of gains, with a greater nutrient density while still maintaining the fluffy goodness.

 

Coconut Pancakes with Rasperries

  • 6 eggs

  • 8 tbsp coconut flour

  • 6 tbsp coconut milk

  • 3 tsp raw organic honey, melted

  • 1/2 tsp sea salt

  • coconut oil or butter for pan

Syrup

  • 340 g of frozen red raspberries (or any berry you love!)

  • 1/2 cup water

  • 1 tbsp raw honey (optional)

  1. Combine all the ingredients in a medium mixing bowl and mix well ensuring there are no lumps

  2. Preheat a pan to 180 degrees and grease pan with coconut oil or butter.

  3. Cook 3-4 minutes per side and ensure you watch them, they won't bubble like traditional pancakes so don't burn them.

Syrup

  1. Blend berries in food proccessor or blender.

  2. Add berries to a medium sauce pan with water and bring to a boil, ensuring you continually stir or they will bubble over.

  3. Once the berries have boiled for 5-10 minutes reduce the heat to low and then pour your syrup through the strainer pushing all the moisture through back into the pan, reserving your chunks of berries.

  4. Add your honey and simmer over low heat until ready to pour over your pancakes.
